YUNNAN WHITE TEA - 2021 moonlight Fairy

Moonlight Fairy is made with tea leaves harvested from old tea trees that have grown freely in a natural forest for many years, without human cultivation, pruning, or fertiliser.  

The cake is well compressed with balanced tightness showing a yellowish-brown colour. The dry leaves release a gentle, mellow aroma with notes of caramel, dry forest floor, dry stems and wild mushrooms, simple, pure and comforting.  Once brewed, the liquor appears orange-yellow colour, clear and bright. The taste evokes the warmth of the autumn mountain forest, clean and clam. Gentle earthy and wood tones blend with stone-fruit sweetness without any bitterness and astringency. The texture is soft and smooth, with a harmonious structure and a  long, lingering aftertaste that endures through many infusions. The Cha Qi (tea energy) is gentle warming, spreading comfortably through the body,  leaving a grounding and calming sensation. 

Origin: Bang Dong, Lincang county, Yunnan Province, China

Elevation: over 1900 meters

Harvest and Process: after picking in April 2021, the leaves are spread out for indoor withering in a naturally air-dried in a cool, ventilated area allowing slow oxidisation, combining with sun-withering by placing under the sun to naturally dry to ensure moisture content is reduced.  The technique requires higher technical skill, focusing on controlling time, temperature, and humidity to allow the aroma to be released. The natural drying process allow the internal substances of the large-leaf variety to be preserved to the greatest extent.  The dried leaves were compressed in October 2021, it has be stored in a natural environment. 

BREWING TIPS: 

Water & Preheat: Use 100°C water and preheat your teapot.

Rinse the Leaves: it is optional, but rinsing could help leave to open and release more balance flavour for the later brews. 

Water to leaves ratio: 7g/150m; 

Brewing Vessels: using porcelain Gaiwan for a better fragrance and Yixing clay teapot for a deeper flavour. 

Brewing time begin with 30 seconds for the first 5 brews, then increasing with each successive brew to your taste.
