The main difference is a traditional processing step called "men huang" (闷黄), or “sealed yellowing.” After heating the fresh leaves, the tea leaves are rolled and then gently wrapped or covered and allowed to undergo non-enzymatic auto-oxidation under the combined effects of heat and moisture, thereby developing its characteristic yellow colour. This reduces some of the grassy sharpness associated with green tea and develops a softer, mellower flavour.
