Through this tasting, we will explore the traditional concept of “one tree, one fragrance; ten fragrances, ten flavours” — 一树一香，十香十味, and discover the distinctive character of each tea.

What is Phoenix Dan Cong?
Phoenix Dan Congis an oolong tea from Fenghuang Mountain in Chaozhou, Guangdong Province, China. Its most distinctive characteristic is often described as“one tree, one fragrance” (一树一香), reflecting the fact that each individual mother tree may develop its own unique aromatic profile.
The many styles of Phoenix Dan Cong found in the market can broadly be associated with different aromatic families, including floral, fruity, honeyed and spicy fragrances.
Traditionally, individual Dan Cong teas are closely associated with the characteristics of their original tea trees. Their names often reflect the distinctive fragrance and flavour perceived in the finished tea, resulting in an extraordinary diversity of profiles — as varied as the tea trees growing across the mountains of Fenghuang.
Phoenix Dan Cong is traditionally prepared usingGong Fu Cha (工夫茶), the Chaozhou style of tea preparation. Multiple short infusions allow the tea to gradually reveal its layers of fragrance, flavour, texture and lingering aftertaste.
This tasting offers an opportunity to experience these ten distinctive fragrance profiles side by side and to appreciate the remarkable diversity, craftsmanship and character of Phoenix Dan Cong.
