Our Phoenix Dan Cong Song Zhong is exquisite and rare. It gives a fresh, gentle and bright floral aroma followed by natural fruity notes that make you think of the colour orange. The infusion is silky, sweet and smooth and has a good mouthfeel. It’s lively body makes your mouth feel like it is having a nice warm sunbath. The aftertaste is elegant and long lasting.
Our Song Zhong is quite special as it comes from a single tree that is about 90 years old and grows naturally on Wu Dong Mountain with rocky soil that gives the tea a deep after taste and intense flavour. Each single tea tree can only produce tea of not more than 10kg for each batch and as such, our current stock of this Song Zhong is only available until this batch we bought has been sold.

Tea Master: Wudong Mountain, Guangdong Province, China. Altitude of 1100 Meters.
April 2020. 2 to 3 slightly open leaves were picked, partly oxidised and then gently baked under low heat.
Water temperature: 100°C
Leaf to water ratio: 1g per 100ml.
Brewing time: About 2-3 minutes.
Tips: Adjust the leaf to water ratio if you prefer to shorten the infusion time or for lighter and stronger taste. Do not leave any water in the pot between each infusion, this is so as not to lose any precious flavour and prevents a too strong taste for the next infusion.
Recommended Water: Try to use natural mineral water.
Water temperature: 100°C
Leaf to water ratio: 8g per 100ml.
Brewing time: About 10 seconds for the first 4 infusions and extra 20 seconds for later brews.
Tips: Always pre-heat your tea vessel with boiling water and discard the water before putting in the tea leaves. Do not rinse the tea leaves.
