Phoenix Dan Cong - Snowflake

Our exquisite and delicate Phoenix Dan Cong Snowflake has a faint bouquet of fragrances of exotic flowers with rich, creamy undertones. This tea reminds people of the scent of the little Chinese plum blossom which starts to flower in mid-winter and the little pink or red flowers bloom through the snow giving the sensation of a cool and breezy circulation to your olfactory system.  It produces a clear and bright infusion that has a buttery smooth body.  Refreshing and lingering aftertaste of a floral bouquet that fills the mouth.

Snowflake or Xuepian is a Dan Cong Oolong tea that is harvested in the end of the Autumn and the beginning the winter. Leaves are usually larger and thicker than the spring harvest Dan Cong due to its unique weather condition.  And not all the Dan Cong bushes will be able to produce any fresh leaves in the winter time simply because it’s too cold.  Every year there is only small quantity of leaves harvested per bush. This is a unique tea with a completely different flavour profile from any Dan Cong Oolongs.

Great for both normal brewing method or Gong Fu style brewing, but the advantage of Gong Fu brewing is that it is easier to make tea taste much thicker and richer because of a higher ratio of tea leaves to the volume of water with shortening the brewing time, and enjoy a very fresh and original flavour of tea from each brewing.

TASTING NOTES

ORIGIN

Tea Master: Fenghuang Mountain, Guangdong Province, China.

HARVEST TIME AND PROCESSING

November-December 2021. 2 to 3 slightly open leaves were picked, partly oxidised and then dried. Finally gently baked over charcoal heat at low heat. 

COMMON BREWING METHOD

Water temperature: 100°C
Leaf to water ratio: 1g per 100ml.
Brewing time: About 2-3 minutes.
Tips: Adjust the leaf to water ratio if you prefer to shorten the infusion time or for lighter and stronger taste. Do not leave any water in the pot between each infusion, this is so as not to lose any precious flavour and prevents a too strong taste for the next infusion.
Recommended Water: Try to use natural mineral water.

GONG FU BREWING METHOD

Water temperature: 95°C 
Leaf to water ratio: 8g per 100ml.
Brewing time: About 10 seconds for the first 4 infusions and extra 20 seconds for later brews.
Tips: Always pre-heat your tea vessel with boiling water and discard the water before putting in the tea leaves. Do not rinse the tea leaves.

Recommended Water: Try to use natural mineral water.
