This Aged White Peony was harvesed and processed the exact way as our new season White Peony tea. The White Peony tea was of exceptional quality due to the perfect weather conditions, prompting Juyan to purchase an additional quantity for ageing.
Aging Process: Unlike fresh White Peony, aged White Peony is stored for several years (typically 3 years or more) under controlled conditions. Over time, the tea undergoes slow oxidation and fermentation, which enhances its flavor and medicinal properties. It deepens the flavour, resulting in a richer, smoother, and more complex taste, notes of honey, drid fruit, wood, and a subtle earthiness develop. Tea's aroma has a warm, mellow aroma with hints of dried flowers and a sweet, lingering finish.
Fresh White Tea:
High in antioxidants, particularly catechins, which help combat free radicals and support overall health.
Contains more volatile compounds that contribute to its fresh, vibrant properties.
Known for its antibacterial, antiviral, and immune-boosting effects.
Aged White Tea:
Antioxidant levels may change over time, but aged white tea develops other beneficial compounds, such as theaflavins and thearubigins, due to slow oxidation.
Often considered gentler on the stomach and more soothing.
Valued for its warming properties and potential to aid digestion and reduce inflammation.
Tea Master: Nine Peaks Mountain of Fuding, Fujian Province, China. Grown at an altitude of 700m.
Harvested on 5th April, 2016. Young shoot with 2 slightly opened leaves of the tea plant (Camellia sinensis) are hand-picked and naturally withered and dried, with minimal processing, which helps preserve their natural properties. Then the teas has been carefully stored under control condition.
Water temperate: 100°C
Leaf to water ratio: 1g per 100ml.
Brewing time: About 3 minutes.
Tips: Adjust the leaf to water ratio if you prefer to shorten the infusion time or for lighter and stronger taste.
Recommended Water: Try to use natural mineral water.

Leaf to water ratio: 5g per 100ml
Brewing time: About 15 seconds for the 1st and 10 seconds for 2nd & 3rd infusion. Increase the infusion time for each subsequent brew.
Tips: For Gong Fu Brewing use a Gaiwan to brew and keep the lid open while the tea is brewing.
