HARVEST TIME AND PROCESSING
April 2000. Three different grades of tea leaves with different fermentation level were blended together, and then compressed into 5kg brick. The brick was kept for long term ageing in Yunnan province.
TASTING NOTES
Deep and dark liquor with smooth mouth feel. Nice character of deep forest with light earth flavour and ageing character.
DESCRIPTION
Tea was compressed into 5kg brick, design to age for long time. It is a perfect time to drink now. Tea was broken to small pieces in London and packed in a foil bag for sale.
BREW TIPS:
Using boiling water. Filtered water or spring water will be ideal.
For a normal way of brewing, using 2g leaves for 100ml of water, brewing for about 2-3 minutes.
Gong Fu Tea Brewing: using 8g for 100ml water, brewing for 10 seconds for the first few brews, then increasing the brewing time to your taste.
Make sure using boiling water to heat the teapot up first to ensure water temperature remaining as hot as possible while brewing, and rinsing the leaves with boiling water for about 10 seconds to allow the tea leaves to loosen up before the 1st brewing.
